perfect hash browns (potato fritters)

  • 1,5 kg potatoes
  • 2 tablespoons salt
  • oil
  • chopped parsley (optional)
  • grated carrot (optional)
  1. Peel potatoes and grate them, using either a hand grater or a food processor.
  2. Season with salt and let them stand for 5 minutes.
  3. Grab the potatoes in your hands and squeeze some water out of them and place them into a new bowl.
  4. Heat oil in a pan.
  5. When oil is warm, take small amount of grated potatoes into your hand, squeeze the water out of them once again and place in hot oil.
  6. Flatten potatoes to an even thickness using a spatula or a fork.
  7. Fry slowly for 8 to 10 minutes on one side and 6 to 8 minutes on the another.
  8. When fried, place on paper towel to absorb excess oil.
