perfect hash browns (potato fritters)
- 1,5 kg potatoes
- 2 tablespoons salt
- oil
- chopped parsley (optional)
- grated carrot (optional)
- Peel potatoes and grate them, using either a hand grater or a food processor.
- Season with salt and let them stand for 5 minutes.
- Grab the potatoes in your hands and squeeze some water out of them and place them into a new bowl.
- Heat oil in a pan.
- When oil is warm, take small amount of grated potatoes into your hand, squeeze the water out of them once again and place in hot oil.
- Flatten potatoes to an even thickness using a spatula or a fork.
- Fry slowly for 8 to 10 minutes on one side and 6 to 8 minutes on the another.
- When fried, place on paper towel to absorb excess oil.
